Walking Taco Bake

This Walking Taco Bake takes everything you love about a classic walking taco—seasoned beef, crunchy corn chips, melty cheese, and fresh toppings—and transforms it into a cozy, shareable casserole that’s perfect for busy weeknights. Instead of opening individual chip bags, everything bakes together in one dish, making it easier to serve and even easier to clean up.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning Taco Bell seasoning works great, but any brand will do
  • cup water
  • 1 large bag chili cheese Fritos plain Fritos may be substituted
  • ½ can condensed cheddar cheese soup
  • ¼ cup whole milk
  • 1 cup shredded mozzarella cheese

Method

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large skillet or pot over medium heat, cook the ground beef until fully browned, breaking it up as it cooks. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Reduce heat to low and simmer for about 5 minutes, or until most of the liquid has been absorbed and the meat is well coated. Remove from heat.
  4. Spread the chili cheese Fritos in an even layer across the bottom of the prepared baking dish.
  5. Spoon the seasoned ground beef evenly over the chips.
  6. In a small saucepan, combine the cheddar cheese soup and milk. Heat over low heat, stirring frequently, until smooth and warmed through.
  7. Pour the cheese mixture evenly over the beef layer.
  8. Sprinkle the shredded mozzarella cheese over the top.
  9. Bake uncovered for 12–14 minutes, or until the cheese is fully melted and bubbly.
  10. Remove from the oven, scoop into bowls or onto plates, and serve warm.
  11. Enjoy!
