Walking Taco Casserole

Walking Taco Casserole is the kind of recipe that instantly brings back memories of football games, school fundraisers, and casual family nights where everyone gathers around the table with big appetites and zero expectations of fancy food.

Ingredients
  

  • pounds ground beef
  • 1 cup chopped onion
  • 3 ounces cream cheese
  • 1 packet taco seasoning
  • 1 4-ounce can diced green chiles
  • 2 –3 cups Fritos corn chips
  • 1 cup shredded taco-blend cheese
  • 1 Roma tomato diced
  • 1 –2 cups shredded lettuce

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Heat a large oven-safe skillet over medium-high heat. Add the ground beef and chopped onion and cook, stirring frequently, until the beef is fully browned and the onion is soft. Drain excess grease if needed.
  3. Stir in the taco seasoning, diced green chiles, and cream cheese. Continue cooking, stirring constantly, until the cream cheese has completely melted and the mixture is smooth and well combined.
  4. Evenly layer the Fritos corn chips over the beef mixture, then sprinkle the shredded taco-blend cheese on top.
  5. Transfer the skillet to the oven and bake for 20 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and immediately top with shredded lettuce and diced tomato
  7. Serve warm, garnished with salsa and sour cream if desired.
