Method
Prepare your pan:
- Line an 8x8-inch square baking pan with parchment paper or lightly grease it. This will make removing the fudge easier.
Chop the cherries:
- Roughly chop the red and green candied cherries and set them aside.
Melt the chocolate mixture:
- In a medium saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir continuously until the chocolate is fully melted and the mixture is smooth. Be careful not to overheat or burn the chocolate.

Add flavorings:
- Remove the saucepan from heat. Stir in the vanilla extract and a pinch of salt until well combined.
Fold in the cherries:
- Gently fold in the chopped red and green candied cherries, reserving a few to sprinkle on top if desired.

Transfer to pan:
- Pour the fudge mixture into the prepared pan and spread evenly with a spatula.

Optional topping:
- Sprinkle the reserved chopped cherries evenly over the top and gently press them into the fudge.
Chill:
- Refrigerate the fudge for at least 3 hours, or until firm.

Cut and serve:
- Once set, lift the fudge out of the pan using the parchment paper edges. Cut into small squares and serve.
