Ingredients
  

  • 4 cups cooked beef roast shredded
  • 2 cups leftover cooked vegetables optional
  • 2 cups frozen mixed vegetables
  • 2 ½ cups beef broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Method
 

  1. In a large stockpot, combine the shredded beef, leftover cooked vegetables (if using), frozen mixed vegetables, and beef broth.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally. Break up any large pieces of beef with your spoon as it heats.
