Marinated Cucumbers, Onions, and Tomatoes

This super-simple salad recipe is so easy to make and the flavors just go together really well. Add the mixture to pasta recipes with your preferred sauce or pair it up with chicken, steak or whatever you’re grilling. 

You can even add it to a soup or serve it as a condiment. Try it on hot dogs or burgers if you cut the vegetables into smaller pieces. You’re sure to come up with your own favorite ways of serving this tool.

The salad vegetables are flavored with a tangy, tasty marinade with sugar, oil and vinegar, and basil. This might be a rather simple salad but the flavor is magnificent and you’ll find it gets even more delicious when left to marinate for a couple of days so the flavor ends up really rich.

Variations and Substitutions:

You can try sweet onion in place of the red or white onion. Use your favorite heirloom tomatoes if you like. You can also sub rice wine vinegar or even malt vinegar for the distilled white vinegar.

Ingredients:

  • Cucumbers
  • Tomatoes
  • Red or white onion, cut into rings
  • Olive oil
  • White sugar
  • Water
  • White distilled vinegar
  • Dried basil
  • Salt and black pepper, to taste

How to make Marinated Cucumbers, Onions, and Tomatoes:

Step 1. Put the vegetables in a bowl and toss to combine.

Step 2. Pour over the water.

Step 3. Whisk the oil, sugar, basil, vinegar, salt, and pepper in a small bowl and add the the vegetables.

Step 4. Stir to coat and marinate for at least 2 hours before serving.

Make this once and you’re going to want to make it all the time. This is such a tasty and versatile salad and it’s great for any occasion or season.

  • 3 chopped fresh tomatoes
  • 1 large red or white onion, cut into rings
  • ¼ cup olive oil
  • ¼ cup white sugar
  • 1 cup water
  • ½ cup white distilled vinegar
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
