Fried Potatoes and Onions

Crispy potatoes are always a great side dish, regardless of what the main course happens to be. They’re a nice side to enjoy during any time of the year and perhaps you’ve had crispy potatoes with onions at a county or state fair.

Potatoes and onions might be considered a simple side dish and it really is, both to make and to enjoy. It has both savory and sweet flavors. And you know how amazing such a dish smells when it’s cooking. This will have your mouth watering long before you serve it up!

You can use yellow onions or opt for sweet ones. Either works here and it just depends how sweet you want the end result to be. As for the frying oil, choose something with a high smoke point such as peanut, avocado or sunflower oil.

Storage Instructions:

Keep leftovers in the refrigerator and use within 3 days. 

Variations and Substitutions:

Use sweet onions like Vidalia if you want a sweeter flavor than yellow onions gives you. Any firm potato will work in place of Yukon Gold. Don’t use fluffy ones – they’re better for baking and will fall apart.

Ingredients:

  • Yukon Gold potatoes
  • Yellow (or sweet) onion
  • Butter
  • Paprika and/or basil, for garnish (optional)
  • Peanut oil, for frying
  • Salt and black pepper, to taste

How to make Fried Potatoes and Onions:

Step 1. Peel and chop the potatoes and onion into bite-sized chunks.

Step 2. Heat some peanut oil with the butter in a skillet over moderate to high heat.

Step 3. Add the potatoes and onion and cook until the potatoes are tender, stirring often.

Step 4. Season with salt and pepper, drain off the excess oil and serve hot, garnished with paprika and/or basil if liked.
