If you aren’t keen on spicy peppers, try to choose mild ones. The younger smoother green ones are typically mild while anything with white flecks or a reddish color is probably hot.

- Italian bread
- Jalapenos, de-seeded and sliced lengthwise
- Sharp cheddar
- Monterey jack
- Cream cheese
- Bacon slices
- Pats of butter, as needed

How to make Jalapeno Popper Grilled Cheese:
Preheat the oven to 375°F.
Divide the cream cheese between the 4 jalapeno halves.
Bake for 25 to 30 minutes then take out of the oven.
Put a slice of cheddar on 2 bread slices and a slice of monterey jack on the other 2 slices.
Slice the cooked jalapenos into bite-sized pieces and divide between the cheddar-topped bread slices.
Now add the bacon on top and then some cilantro if liked.


Add the other bread slices on top to make 2 sandwiches.

Top each one with some butter pats and cook butter side-down in a skillet.
Add more butter on top and cook until the bread is golden brown and the cheese is melted.
