There aren’t many things in life that smell as cozy and warm as cinnamon buns baking in the oven. Every bite of the soft, fluffy dough swirled with aromatic cinnamon sugar and covered in a rich glaze or cream cheese frosting is pure bliss. Cinnamon buns always add happiness and coziness to the table, whether they are served for a special weekend breakfast, as a holiday custom, or as a way to lift a sour day.

I love this recipe for Lovely Cinnamon Buns because it’s simple and satisfying. Making these fluffy, gooey, cinnamon-spiced treats doesn’t require you to be a skilled baker. They have just the right amount of spice and richness, are sweet but well-balanced, and are soft but robust. Your kitchen will be filled with anticipation and a sense of coziness just from the scent!

Why Do I Love This Recipe?

I love this recipe because it strikes the perfect balance between tender dough and gooey filling. It’s not overly sweet, so the cinnamon flavor shines through beautifully. Plus, it’s forgiving — perfect for bakers of all levels who want to impress family and friends without stress. The buns come out soft and fluffy with a caramelized cinnamon swirl that melts in your mouth.

Serving Suggestions

Serve these cinnamon buns warm, straight from the oven, ideally with a drizzle of cream cheese frosting or simple powdered sugar glaze. They’re perfect for breakfast with a cup of coffee or tea, or as an afternoon treat alongside a glass of cold milk. For a special occasion, add fresh berries or a sprinkle of chopped nuts on top for extra texture.

Storage & Freezing

Store leftover cinnamon buns in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week. To freeze, wrap buns individually in plastic wrap and place them in a freezer bag. Freeze for up to 3 months. To reheat, thaw at room temperature and warm in the oven or microwave for a few seconds until soft and gooey again.

Variations of the Recipe

Try adding raisins, chopped pecans, or walnuts into the cinnamon filling for added texture and flavor. Swap the cinnamon for pumpkin pie spice during fall, or add a splash of orange zest for a citrus twist. You can also make mini cinnamon buns or use this dough to make pull-apart cinnamon bread. No matter how you customize it, these buns bring a little magic to any day.

Ingredients Method

Ingredients

For the Dough:
  • 1 cup milk
  • 1 egg beaten
  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 1/2 tablespoons active dry yeast
For the Cinnamon Sugar Filling:
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/4 cup softened butter
For the Icing:
  • 1 cup powdered icing sugar
  • 1 to 1 1/2 tablespoons water
  • 1 teaspoon vanilla extract

Method

Prepare the dough:
  1. Warm the milk slightly (about 110°F/43°C), then pour it into a large mixing bowl. Add the yeast and stir gently. Let it sit for 5–10 minutes until it becomes foamy.
Mix wet ingredients:
  1. Add the beaten egg, melted butter, granulated sugar, and salt to the yeast mixture. Stir to combine.
Add flour:
  1. Gradually add the flour, one cup at a time, mixing until a soft dough forms. You may need to use your hands when the dough gets too thick to stir.
Knead the dough:
  1. Turn the dough onto a floured surface and knead for about 8–10 minutes until smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.
First rise:
  1. Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the filling:
  1. In a small bowl, mix together the brown sugar and cinnamon. Set aside the softened butter.
Roll and fill the dough:
  1. Punch down the risen dough and roll it out on a floured surface into a large rectangle (about 15×9 inches). Spread the softened butter evenly over the dough, then sprinkle the cinnamon sugar mixture on top.
Shape the buns:
  1. Starting from the long edge, roll the dough tightly into a log. Cut the log into 12 equal slices and place them cut-side up in a greased 9×13-inch baking pan.
Second rise:
  1. Cover the pan and let the rolls rise for another 30–45 minutes until puffy.
Bake:
  1. Preheat your oven to 350°F (175°C). Bake the cinnamon buns for 25–30 minutes or until golden brown.
Make the icing:
  1. While the buns bake, whisk together the powdered sugar, water, and vanilla extract until smooth.
Glaze and serve:
  1. Remove the buns from the oven and let them cool for 5 minutes. Drizzle the icing over warm buns and serve.
  2. Enjoy!
