There’s nothing quite as comforting as a tender, flavorful pot roast that melts in your mouth, and the Slow Cooker Baked 3 Packet Pot Roast is the ultimate example of home-cooked comfort food. This recipe takes the stress out of weeknight dinners while delivering restaurant-quality flavor. Using just a few simple seasoning packets and a handful of fresh ingredients, the slow cooker does all the hard work for you, producing a juicy, savory roast with minimal effort. What makes this pot roast so special is how easy it is to customize, making it perfect for busy families, lazy Sundays, or even a casual dinner with friends. From the first aroma wafting through your kitchen to the last bite of tender meat and perfectly cooked vegetables, this dish is a guaranteed crowd-pleaser.

Why Do I Love This Recipe?
I love this recipe because it combines simplicity with unbeatable flavor. The three seasoning packets provide a rich, complex taste without needing dozens of spices or hours of preparation. The slow cooking method ensures the meat is tender and juicy, while the vegetables soak up all the savory juices. It’s a recipe that always impresses but never stresses me out. Plus, the leftovers are even better the next day—an extra reason to love it!

Serving Suggestions
Serve your 3 Packet Pot Roast over creamy mashed potatoes, buttery egg noodles, or even rice to soak up all the delicious juices. Pair it with a side of roasted or steamed vegetables for a well-rounded meal. A simple green salad or crusty bread can also elevate this comfort dish, making it perfect for family dinners or small gatherings.

Storage & Freezing
This pot roast stores beautifully. Keep leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm the roast in a covered dish or in the microwave, adding a splash of broth if needed to keep the meat juicy. You can also freeze portions for up to 2-3 months—just thaw overnight in the fridge and reheat slowly for best results.

Variations of the Recipe
Feel free to experiment with different seasoning packets to change the flavor profile—Italian, garlic and herb, or even onion soup mix work wonderfully. Swap out potatoes for sweet potatoes, or add extra carrots, celery, or parsnips for a heartier vegetable mix. You can even add a splash of red wine or beef broth for an elevated, restaurant-style taste. This recipe is as versatile as it is comforting, making it a staple in any home cook’s repertoire.

Ingredients Method

Ingredients

  • 1 3–4 pound chuck roast
  • 1 packet ranch dressing mix
  • 1 packet Italian dressing mix
  • 1 packet brown gravy mix
  • 1 cup water or beef broth
  • 2 tablespoons olive oil
  • 4 –5 large carrots peeled and cut into chunks
  • 5 –6 medium potatoes peeled and quartered
  • 1 large onion quartered
  • Salt and pepper to taste

Method

Preheat the oven:
  1. Set your oven to 325°F (165°C).
Sear the roast:
  1. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it for 3–4 minutes on each side until browned. Remove the roast and set aside.
Prepare the vegetables:
  1. Add the carrots, potatoes, and onion to the pot, stirring briefly to coat them in the remaining oil and pan drippings.
Return the roast:
  1. Place the seared roast on top of the vegetables.
Mix the seasoning packets:
  1. In a small bowl, combine the ranch dressing mix, Italian dressing mix, brown gravy mix, and water or beef broth. Stir until well blended.
Pour over roast:
  1. Pour the mixture evenly over the meat and vegetables.
Bake the pot roast:
  1. Cover the pot with a lid or aluminum foil and bake in the preheated oven for 3–4 hours, or until the meat is tender and easily pulls apart with a fork.
Serve:
  1. Remove from the oven and let the roast rest for a few minutes. Slice or shred the meat and serve hot with the vegetables, spooning the rich gravy over top.
  2. Enjoy!
