Baked Zucchini Fries

Are you craving a salty snack but want to eat healthy? The baked zucchini fries are your go-to recipe when craving a salty snack with a strong flavor. The recipe is simple, oil-free, and requires no effort.

  • Zucchini Fries
  • 2 medium zucchini
  • 1 egg
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian spice
  • Lemon Parsley Aioli (optional)
  • 1/2 cup mayonnaise
  • 1 lemon, juiced
  • 1 garlic clove, minced
  • 1 tbsp finely chopped parsley
  • salt and pepper

Instructions

  1. Preheat the oven to 425 degrees F. 
  2. Slice the zucchini into 4 equal pieces and quarter each one. You will end up with a total of 16 pieces. 
  3. Beat the egg in a small bowl.
  4. Add the grated parmesan, Italian spice, and garlic Italian in a medium mixing bowl. Stir to combine. 
  5. Take one zucchini pie and dip it in the beaten egg. Then, toss it in the parmesan herb mixture. 
  6. Place over a baking sheet lined with parchment paper. Repeat until all the zucchini pieces are done.
  7. Bake for 15 minutes; remove and flip to the other side. Bake for 10 to 15 minutes. 
  8. Combine the mayonnaise, lemon, garlic, parsley, salt, and pepper in a small bowl. Serve with the zucchini fries and enjoy.
