- Zucchini Fries
- 2 medium zucchini
- 1 egg
- 1 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian spice
- Lemon Parsley Aioli (optional)
- 1/2 cup mayonnaise
- 1 lemon, juiced
- 1 garlic clove, minced
- 1 tbsp finely chopped parsley
- salt and pepper
Instructions
- Preheat the oven to 425 degrees F.
- Slice the zucchini into 4 equal pieces and quarter each one. You will end up with a total of 16 pieces.
- Beat the egg in a small bowl.
- Add the grated parmesan, Italian spice, and garlic Italian in a medium mixing bowl. Stir to combine.
- Take one zucchini pie and dip it in the beaten egg. Then, toss it in the parmesan herb mixture.
- Place over a baking sheet lined with parchment paper. Repeat until all the zucchini pieces are done.
- Bake for 15 minutes; remove and flip to the other side. Bake for 10 to 15 minutes.
- Combine the mayonnaise, lemon, garlic, parsley, salt, and pepper in a small bowl. Serve with the zucchini fries and enjoy.
