This delicious reuben sandwich is generously loaded with plenty of sliced corned beef, melted Swiss cheese, thousand island dressing, and sauerkraut, all served on perfectly toasted rye bread to hold the deliciousness inside.

It’s a classic sandwich with a lot of fans that originated in Nebraska’s Blackstone Hotel more than a century ago. Paired with fries or wedges, potato salad or your side dishes of choice, that makes a delicious lunch or dinner that everyone will rave about.

You need rye or pumpernickel bread to make this sandwich along with swiss cheese, corned beef, butter, and thousand island dressing. It’s best to make your own dressing for the freshest flavor, and thousand island dressing is made with mayo, ketchup, onion, sweet pickle relish, and a little paprika and salt. As you’re making your own, you can tweak the ingredients to your palate.

You can use readymade thousand island dressing if you want, or have pumpernickel bread in place of the rye bread. 

Ingredients needed:

  • Rye bread or pumpernickel
  • Swiss cheese
  • Butter
  • Corned beef
  • Sauerkraut, well drained

FOR THE DRESSING:

  • Mayonnaise
  • Sweet pickle relish
  • Grated onion
  • Pinch of paprika
  • Ketchup
  • Pinch of salt

How to make the BEST Reuben Sandwich Recipe:

Combine the dressing ingredients and set aside.

Put a piece of Swiss cheese on each piece of bread and then spoon on about a tablespoon of dressing.

Top 4 of the bread slices with corned beef and top with sauerkraut.

Fold the sides with the corned beef over the sides with the sauerkraut so you get 4 sandwiches.

Spread butter over the top of each one.

Cook butter side facing down in a hot skillet.

Spread butter over the side facing up and cover the skillet with foil loosely.

Once the bottom is golden brown, flip the sandwich over and cook until golden brown on both sides, then serve hot.

Storage Instructions

Leftovers will keep for a day but won’t taste as fresh as when first prepared.
