Cowboy Casserole

  • 1 lb Extra Lean Beef 80 / 20
  • 1 tbsp. Garlic Minced
  • 1 lg Purple Onion Diced
  • 1 15 oz Can Of Corn Drained
  • 1 15 oz Can of Black Beans Drained
  • 1 Can Of Fat-Free Mushroom Soup
  • 2 cups Colby Cheddar Shredded
  • ½ cup Skim Milk
  • ¼ cup Fat-Free Sour Cream
  • 1 30 oz Bag Of Frozen Tater Tots

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9×13 baking dish with non-stick cooking spray and set it aside.
  2. Add the ground beef, minced garlic, and onion to a skillet over medium heat. Cook for 6 minutes.
  3. Drain the excess grease from the beef.
  4. Mix the mushroom soup, skim milk, and sour cream in a small bowl. 
  5. Pour the milk mixture into the skillet and stir to combine.
  6. Add drained corn and black beans. Stir well.
  7. Take the greased baking dish and layer the tater tots on the bottom. Add half of the mixture from the skillet over them and spread it evenly.
  8. Add one cup of shredded cheese to the baking dish’s meat mixture.
  9. Repeat the layers. 
  10. Bake for 30 to 35 minutes.
