Cowboy Meatloaf and Potato Casserole

April 3, 2026 //  by Ann

Cowboy Meatloaf and Potato Casserole is the kind of hearty, stick-to-your-ribs meal that feels like it came straight out of a rustic American kitchen. Inspired by classic ranch-style cooking, this dish brings together two comfort food favorites—savory meatloaf and tender, creamy potatoes—into one satisfying casserole. It’s the type of recipe that feels nostalgic, filling the kitchen with rich aromas and bringing everyone to the table without needing to call twice.

This recipe reflects the spirit of old-school American cooking, where meals were built to be simple, affordable, and filling. Cowboys and hardworking families needed dishes that could fuel long days, and casseroles like this became staples because they used pantry ingredients and fed a crowd. Today, it still holds that same comforting charm but fits perfectly into busy modern life.

What makes this dish so special is the layering of flavors. The juicy, well-seasoned meatloaf forms a rich base, while the potatoes on top become soft and flavorful as they bake, soaking up all those delicious juices. Add in melted cheese or a creamy topping, and you’ve got a dish that’s both hearty and irresistible. It’s warm, comforting, and exactly the kind of meal you crave after a long day.

Another reason this casserole stands out is how easy it is to prepare. Everything comes together in one dish, making cleanup simple and the cooking process stress-free. It’s perfect for family dinners, meal prep, or even potlucks where you want something reliable and crowd-pleasing.

Why Do I Love This Recipe?

I love this recipe because it combines two classic comfort foods into one easy dish. It’s rich, filling, and packed with flavor. Plus, it’s simple to make and always a hit with family and guests.

Serving Suggestions

Serve this casserole hot, straight from the oven. It pairs perfectly with a fresh green salad, roasted vegetables, or buttered corn on the cob. You can also add a dollop of sour cream or a drizzle of gravy for extra richness.

Storage and Freezing

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat in the oven or microwave until warmed through. This casserole freezes well—wrap tightly and freeze for up to 2 months. Thaw overnight in the fridge before reheating.

Variations of the Recipe

You can customize this dish by using ground turkey or chicken instead of beef for a lighter option. Add bacon for extra flavor or mix in vegetables like corn or peas. Swap regular potatoes for sweet potatoes, or use mashed potatoes on top for a different texture. You can also spice it up with jalapeños or your favorite seasoning blend.

Cuisine: American
Ingredients Method

Ingredients

  • 1 package refrigerated premade mashed potatoes
  • 1 lb ground beef
  • ¼ cup BBQ sauce
  • ½ large onion finely chopped
  • ⅓ cup bread crumbs
  • 1 large egg
  • 1 cup bacon pieces cooked
  • 2 teaspoons chili powder
  • 1 cup shredded Mexican blend cheese
  • Salt and black pepper to taste

Method

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. In a large mixing bowl, combine the ground beef, BBQ sauce, chopped onion, bread crumbs, egg, chili powder, salt, and black pepper.
  3. Using your hands or a spoon, mix everything together until well combined. Be careful not to overmix, as this can make the meatloaf dense.
  4. Press the meat mixture evenly into the bottom of the prepared baking dish, forming a flat, even layer.
  5. Place the dish in the preheated oven and bake for 20–25 minutes, or until the meat is fully cooked through.
  6. Carefully remove the dish from the oven and drain off any excess grease. This step helps keep the casserole from becoming too oily.
  7. While the meat is baking, prepare the mashed potatoes according to the package instructions until smooth and creamy.
  8. Spread the prepared mashed potatoes evenly over the cooked meat layer. Use a spatula to smooth the top.
  9. Sprinkle the shredded cheese evenly over the mashed potatoes.
  10. Add the cooked bacon pieces on top of the cheese layer, spreading them out evenly.
  11. Turn your oven to broil and return the dish to the oven. Broil for 3–5 minutes, or until the cheese is melted, bubbly, and lightly golden. Keep a close eye on it to prevent burning.
  12. Remove from the oven and let it rest for about 5 minutes before serving. This helps everything set and makes it easier to slice.
  13. Serve warm and enjoy this hearty, comforting cowboy-style casserole.
  14. Enjoy!
