Ingredients Method

Ingredients
  

  • 2½ lbs potatoes peeled and chopped
  • 1½ lb smoked sausage sliced
  • 1 onion chopped
  • 1 can cream of mushroom soup
  • 1 cup milk
  • ¾ teaspoon Creole seasoning

Method
 

  1. Lightly spray the inside of your crockpot or slow cooker with cooking spray to prevent sticking.
  2. Peel and chop the potatoes into evenly sized chunks so they cook at the same rate.
  3. Place the chopped potatoes, sliced smoked sausage, and chopped onion into the bottom of the crockpot. Gently toss them together to distribute the ingredients evenly.
  4. In a medium mixing bowl, combine the cream of mushroom soup, milk, and Creole seasoning. Whisk until the mixture is smooth and well blended.
  5. Pour the soup mixture over the sausage and potatoes in the crockpot.
  6. Stir everything together so all the ingredients are evenly coated with the creamy sauce.
  7. Cover the crockpot with the lid and cook on low for 7–8 hours or on high for 4–5 hours, until the potatoes are tender and the flavors are well combined.
  8. About halfway through cooking, you can gently stir the mixture if desired to help everything cook evenly (optional).
  9. Once the potatoes are soft and fully cooked, give the dish a final stir. Taste and adjust seasoning if needed.
  10. Serve hot, spooning the creamy sausage and potatoes into bowls or onto plates.
