Jalapeno Popper Grilled Cheese

You’re going to fall in love with this fantastic jalapeno bacon grilled cheese. It just oozes so many incredible flavors. Not only do you have cheese in there, but also jalapenos and bacon for a wonderful flavor.

This amazing comfort food is easy to make. Remember to wear gloves when preparing the jalapenos since an accidental rub in the eye without thinking is never pleasant! If you aren’t keen on spicy peppers, try to choose mild ones. The younger smoother green ones are typically mild while anything with white flecks or a reddish color is probably hot.

The jalapeno poppers come out quite soft but if you do prefer them with a bit of bite you can reduce the cooking time by 10 minutes. Choose your favorite Italian bread, artisan bread or thick crusty bread slices to make these grilled cheese sandwiches.

Variations and Substitutions:

You can use turkey bacon instead of pork bacon if you want, or swap the jalapenos for a hotter or milder type of chili pepper.

Ingredients needed:

  • Italian bread
  • Jalapenos, de-seeded and sliced lengthwise
  • Sharp cheddar
  • Monterey jack
  • Cream cheese
  • Bacon slices
  • Pats of butter, as needed
  • Chopped cilantro (optional)

How to make Jalapeno Popper Grilled Cheese:

Preheat the oven to 375°F. 

Divide the cream cheese between the 4 jalapeno halves.

Bake for 25 to 30 minutes then take out of the oven.

Put a slice of cheddar on 2 bread slices and a slice of monterey jack on the other 2 slices.

Slice the cooked jalapenos into bite-sized pieces and divide between the cheddar-topped bread slices.

Now add the bacon on top and then some cilantro if liked.

Add the other bread slices on top to make 2 sandwiches.

Top each one with some butter pats and cook butter side-down in a skillet.

Add more butter on top and cook until the bread is golden brown and the cheese is melted.

Storage Instructions:

Leftovers will keep for up to 3 days in an airtight container in the refrigerator and can be warmed back up in a skillet.
