- 2 pounds of colossal shrimp
- 1 can of fire-roasted tomatoes
- 1 can of coconut milk
- Half a cup of Parmesan
- Half a cup of Mozzarella
- Your favorite seasonings
- Shrimp marinade: Jerk seasoning, sofrito, diced garlic
- Cooked fettuccine
Instructions
- Heat oil in a frying pan and cook the shrimp, jerk seasoning, and diced garlic.
- When the shrimp is thoroughly cooked, remove it and set it aside.
- Add the coconut milk, sofrito, far-roasted tomatoes, coconut milk, and seasonings to taste. Bring this mixture to a boil. Reduce and add cooked fettuccine.
- Add shredded Parmesan and Mozzarella and stir until the cheese is melted and combined.
- Add the cooked shrimp and serve your fettuccine.
