Meatloaf with Mashed Potatoes and Cheese

Meatloaf is a great staple to serve on busy weeknights and most home cooks have their own preferred version. However, this version is quite different. It boasts all those classic meatloaf flavors you know and love along with the mashed potato topping you’d expect to find on a shepherd’s pie. 

As a dish that has meat, potatoes and vegetables, this can be a standalone dish. You don’t need to whip up any side dishes for this, although of course you can if you want to. Perhaps something like grilled vegetables or a salad would pair nicely.

The meatloaf is made with ground beef, garlic, onion, and breadcrumbs, as you would expect from a meatloaf recipe, along with tomato sauce and an egg. And then you have BBQ sauce, peas, and parsley in there too. The mashed potatoes topping has cheese, cream and butter for a rich and satisfying flavor.

Can You Make It Ahead?

Yes, you can prepare it in advance and refrigerate until you’re ready to bake. You can also make the mashed potatoes ahead if you like and keep those refrigerated too.

Storage Instructions:

Leftovers will keep for up to 4 days in an airtight container in the refrigerator.

Variations and Substitutions:

You can use frozen mixed vegetables, perhaps peas and carrots or peas, carrots and corn, in place of the peas.

Ingredients:

  • Ground beef
  • Olive oil
  • Minced garlic cloves
  • Egg
  • Tomato sauce
  • Breadcrumbs
  • Onion
  • Frozen peas
  • Chopped fresh parsley
  • BBQ sauce
  • Salt and black pepper, to taste

FOR THE TOPPING: 

  • Potatoes
  • Shredded cheddar cheese
  • Butter
  • Heavy whipping cream
  • Salt and black pepper, to taste

How to make Meatloaf with Mashed Potatoes and Cheese:

Step 1. Heat the oil in a skillet and then saute the onions until tender.

Step 2. Stir in the garlic and cook for 30 seconds and then take the skillet off the heat.

Step 3. Put the onion mixture in a bowl and let it cool.

Step 4. Preheat the oven to 400 degrees F.

Step 5. Add the other ingredients for the meatloaf to the bowl and mix using your hands.

Step 6. Shape the mixture into a loaf and bake in a greased casserole dish for 30 minutes.

Step 7. Meanwhile, you can boil the potatoes until they’re tender.

Step 8. Drain and mash with the cream and butter, along with some salt and pepper.

Step 9. Top the meatloaf with the mashed potatoes and then the cheddar cheese.#

Step 10. Bake for 15 minutes and then serve hot.
