Meatloaf:
- 1 tbsp. Olive Oil (Minced)
- 3 tsp. Garlic
- 1 Onion (Chopped)
- 1 ½ lb. Beef (Ground)
- ¾ cup Breadcrumbs
- ¼ cup Tomato Sauce
- 1 Large Egg
- ¼ cup BBQ sauce
- ½ cup Frozen Peas
- ¼ cup Fresh Parsley (Chopped)
- Salt And Pepper To Taste
For The Potatoes:
- 4 tbsp. Butter
- 1 ½ lb. Potatoes Peeled And Cut Into Pieces
- ¼ cup Heavy Whipping Cream
- 1 cup Cheddar Cheese (Shredded)
- Salt And Pepper To Taste
Instructions
- Start by preheating the oven to 400 degrees F.
- Add the olive oil in a skillet over medium. Cook the onions until softened. Add garlic and cook for half a minute or until fragrant.
- Remove and let this mixture cool down.
- When the mixture is cool, add it to a large mixing bowl. Add to taste the ground beef, breadcrumbs, tomato sauce, eggs, frozen peas, parsley, BBQ sauce, and salt and pepper. Mix with your hands until combined.
- Then, form the mixture into a meatloaf. Place it in a greased baking dish for 30 minutes at 400 degrees F.
- Cook the potatoes in salt water until tender. Remove and drain. Mash the potatoes together with the butter and heavy whipping cream, and season with salt and pepper to taste.
- Spread the mashed potatoes over the baked meatloaf. Sprinkle the shredded cheese on top. Bake for 15 more minutes so the cheese is nicely melted. Serve and enjoy!
