Meatloaf with Mashed Potatoes and Cheese

The creamy mashed potato layer complements the richness of the ground beef. The goya cheesy layer on top melds the flavors, creating a gourmet delicacy for your taste buds. Since it already has mashed potatoes on top, you don’t have to add carbs as a side dish.

Meatloaf:

  • 1 tbsp. Olive Oil (Minced)
  • 3 tsp. Garlic
  • 1 Onion (Chopped)
  • 1 ½ lb. Beef (Ground)
  • ¾ cup Breadcrumbs
  • ¼ cup Tomato Sauce
  • 1 Large Egg
  • ¼ cup BBQ sauce
  • ½ cup Frozen Peas
  • ¼ cup Fresh Parsley (Chopped)
  • Salt And Pepper To Taste

For The Potatoes:

  • 4 tbsp. Butter
  • 1 ½ lb. Potatoes Peeled And Cut Into Pieces
  • ¼ cup Heavy Whipping Cream
  • 1 cup Cheddar Cheese (Shredded)
  • Salt And Pepper To Taste

Instructions

  1. Start by preheating the oven to 400 degrees F. 
  2. Add the olive oil in a skillet over medium. Cook the onions until softened. Add garlic and cook for half a minute or until fragrant. 
  3. Remove and let this mixture cool down. 
  4. When the mixture is cool, add it to a large mixing bowl. Add to taste the ground beef, breadcrumbs, tomato sauce, eggs, frozen peas, parsley, BBQ sauce, and salt and pepper. Mix with your hands until combined. 
  5. Then, form the mixture into a meatloaf. Place it in a greased baking dish for 30 minutes at 400 degrees F. 
  6. Cook the potatoes in salt water until tender. Remove and drain. Mash the potatoes together with the butter and heavy whipping cream, and season with salt and pepper to taste. 
  7. Spread the mashed potatoes over the baked meatloaf. Sprinkle the shredded cheese on top. Bake for 15 more minutes so the cheese is nicely melted. Serve and enjoy!
