How to make Meatloaf with Mashed Potatoes and Cheese:
Step 1. Start by preheating the oven to 400 degrees F.
Step 2. Add the olive oil in a skillet over medium. Cook the onions until softened. Add garlic and cook for half a minute or until fragrant.
Step 3. Remove and let this mixture cool down.
Step 4. When the mixture is cool, add it to a large mixing bowl. Add to taste the ground beef, breadcrumbs, tomato sauce, eggs, frozen peas, parsley, BBQ sauce, and salt and pepper. Mix with your hands until combined.
Step 5. Then, form the mixture into a meatloaf. Place it in a greased baking dish for 30 minutes at 400 degrees F.
Step 6. Cook the potatoes in salt water until tender. Remove and drain. Mash the potatoes together with the butter and heavy whipping cream, and season with salt and pepper to taste.
Step 7. Spread the mashed potatoes over the baked meatloaf. Sprinkle the shredded cheese on top.
Bake for 15 more minutes so the cheese is nicely melted. Serve and enjoy!
