Pinwheels are always fun to make and to eat and there are all kinds of wonderful fillings to choose from. This Mexican version is truly delicious though and you can play around with the ingredients, perhaps opting to spice them up, adding some meat or chicken, or trying different kinds of tortillas or cheese.

These are quick and easy to prepare and as well as adjusting the ingredients if you like you can choose the thickness, cutting each rolled up filled tortilla into thick slices or thin ones, as you prefer. Everyone will be clamoring to taste this delicious snack.

Storage Instructions:

Keep leftovers refrigerated and eat within a day. They will keep for longer but the tortillas won’t have such a good texture after about a day.

  • Sour cream
  • Green onion
  • Black olives
  • Shredded cheddar cheese
  • Tomato salsa, plus more for dipping

How to make Mexican Tortilla Pinwheels:

Step 1. Mix the salsa, cream cheese, taco seasoning, and sour cream together.

Step 2. Add in the olives, green onion and shredded cheddar.

Step 3. Spread this mixture all over the tortillas, to within ¼-inch of the edges, and roll them up tightly.

Step 4. Arrange seam side-down on a plate and cover with plastic wrap.

Step 5. Refrigerate for 2 hours, then cut into 1-inch pieces and serve.
