Mouthwatering Tortellini Soup

You’re going to love this cozy combo of Italian sausage, cheese tortellini, tomatoes, arugula and a range of herbs, spices and seasonings. Served by itself or paired with a vinaigrette-dressed spring green salad or some garlic bread (or both!) this is a very satisfying meal.

You don’t need many ingredients to make it or a lot of time to cook it, and it’s a lovely warming dish if the weather is cold. It’s also good when the weather isn’t cold – and this soup is too tasty not to enjoy all year round!

Sweet, mild or even hot Italian sausage is delicious in this easy soup recipe and you can use any kind of broth you want, perhaps beef, chicken or even vegetable broth. You can use fresh, dried or frozen tortellini too, and throw in any extra veggies you want.

Feel free to use spinach in place of the arugula. It’s worth using a high quality link sausage – just remove and discard the casings first. Add dried herbs instead of fresh if that’s all you have.

Ingredients needed:

  • Ground Italian sausage or beef
  • Chopped yellow onion
  • Dried oregano
  • Dried basil
  • Dried parsley
  • Minced garlic cloves
  • Dried thyme
  • Pinch of red pepper flakes
  • Beef broth
  • Tomato paste
  • Canned fire-roasted tomatoes
  • Arugula
  • Fresh cheese tortellini
  • Vegetable broth or chicken broth
  • Grated parmesan, to serve
  • Fresh thyme and/or basil, to serve (optional)

How to make Mouthwatering Tortellini Soup:

Step 1. Brown the sausage or beef in a pot over a moderate heat, adding the onion when the meat is almost all browned.

Step 2. Turn the heat down and stir in the garlic, thyme, parsley, oregano, basil, and red pepper flakes.

Step 3. Cook for a minute, stirring all the time.

Step 4. Whisk the tomato paste and ½ cup beef broth together, then add the vegetable or chicken broth to the pot along with the canned tomatoes and tomato paste beef broth mixture.

Step 5. Turn the heat up, bring to a boil and then turn it down to a simmer.

Step 6. Add the tortellini and simmer for 10 to 15 minutes or until done.

Take the pan off the heat, stir in the arugula and season to taste.

Step 7. Serve hot with freshly grated parmesan cheese and fresh herbs, if liked, for garnish.

Storage Instructions:

Leftovers will keep for up to 3 days in an airtight container in the refrigerator. Don’t reheat the leftovers over too high a heat or stir too vigorously, as you don’t want the tortellini to split or get soggy.
