Ingredients
  

  • 1½ cups all-purpose flour
  • ½ tsp kosher salt
  • 1 tsp baking powder
  • 1 cup sugar
  • Zest of 1 large orange
  • ¾ cup buttermilk
  • ½ cup canola oil
  • 2 large eggs
  • 1 tbsp fresh orange juice
  • 1 tsp vanilla extract
  • 1½ cups fresh cranberries divided

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with baking spray.
  2. In a large bowl, whisk together flour, salt, baking powder, sugar, and orange zest until well combined.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, orange juice, and vanilla until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Do not overmix.
  5. Gently fold in 1 cup of the fresh cranberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Sprinkle the remaining ½ cup cranberries over the top.
  8. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
