Taco Stuffed Tomatoes

Taco stuffed tomatoes are the ultimate summer recipe that bursts with Mexican flavors. The ripe and juicy tomato pairs perfectly with the Mexican filling enhanced with spices and creamy cheddar cheese on top.

Ingredients

  • 4 Large tomatoes
  • 1 lb. Ground beef
  • 1 Packet taco seasoning
  • 4 C. Spinach raw
  • ½ C. Corn
  • ½ C. Cheddar cheese shredded
  • Parsley for garnish

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cook the ground beef in a skillet over medium-high until brown. Drain the excess grease.
  3. Stir in the taco seasoning, spinach, and corn. Cook until the spinach is wilted.
  4. Cut the top off the tomatoes and spoon the inside to prepare it for stuffing. 
  5. Divide the prepared filling between the tomatoes. Add shredded cheddar on top.
  6. Bake for 15 minutes in the preheated oven. Serve with finely chopped parsley, and enjoy.
