- 3 ½ C. Cooked egg noodles
- 1 lb. Ground beef
- 15 oz. Can of corn drained
- 1 C. Salsa
- ¼ C. Sliced black olives
- ¼ C. Taco sauce
- 15 oz. Can kidney beans be rinsed and drained well
- 1 Pack of taco seasoning
- ½ C. Tomato sauce
- Shredded cheddar cheese optional
Instructions
- Preheat the oven to 350 degrees F. Grease a 9×13 baking dish and set it aside.
- Cook ground beef in a skillet over medium-high until brown. Drain the excess grease.
- Stir in the drained corn, salsa, sliced black olives, taco sauce, beans, taco seasoning, and tomato sauce.
- Add the cooked egg noodles to the meat mixture in the skillet and stir.
- Transfer the meat mixture to the baking dish. Top with shredded cheddar cheese if using.
- Bake the Mexican casserole for 30 minutes.
