Throw Together Mexican Casserole

It is a simple, quick, and inexpensive meal that can feed a crowd. It is a real crowd-pleaser that bursts with Mexican flavors, and you don’t have to break the bank. The egg noodles soak up the salsa and seasonings, and the gooey cheese adds extra flavor.

Ingredients

  • 3 ½ C. Cooked egg noodles
  • 1 lb. Ground beef
  • 15 oz. Can of corn drained
  • 1 C. Salsa
  • ¼ C. Sliced black olives
  • ¼ C. Taco sauce
  • 15 oz. Can kidney beans be rinsed and drained well
  • 1 Pack of taco seasoning
  • ½ C. Tomato sauce
  • Shredded cheddar cheese optional

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9×13 baking dish and set it aside. 
  2. Cook ground beef in a skillet over medium-high until brown. Drain the excess grease.
  3. Stir in the drained corn, salsa, sliced black olives, taco sauce, beans, taco seasoning, and tomato sauce. 
  4. Add the cooked egg noodles to the meat mixture in the skillet and stir. 
  5. Transfer the meat mixture to the baking dish. Top with shredded cheddar cheese if using.
  6. Bake the Mexican casserole for 30 minutes.
