Ingredients
  

  • 1½ lbs boneless skinless chicken breast
  • 2 eggs
  • ⅓ cup almond flour
  • 1 cup shredded mozzarella
  • 2 tbsp chopped parsley
  • 2 tbsp chopped chives
  • 2 tbsp chopped basil
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Salt and black pepper to taste

Method
 

  1. Finely chop the chicken into very small pieces using a sharp knife, or pulse briefly in a food processor until minced.
  2. Transfer the chicken to a large bowl. Add eggs, mozzarella, almond flour, garlic powder, herbs, salt, and pepper. Mix thoroughly until well combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Scoop spoonfuls of the mixture into the skillet and flatten slightly with a spatula to form small patties.
  5. Cook for 3–4 minutes per side, or until golden brown and fully cooked through.
