Mandarin Orange Chicken Salad

March 30, 2026 //  by Ann

Mandarin Orange Chicken Salad is a fresh, colorful dish that perfectly balances sweet, savory, and crunchy flavors. It’s the kind of salad that feels light and refreshing while still being satisfying enough to serve as a full meal. The combination of tender chicken, crisp greens, juicy mandarin oranges, and a flavorful dressing creates a wonderful mix of textures and tastes. Many people love this salad because it brings together bright citrus flavors with hearty ingredients, making it both nutritious and delicious.

This type of salad became especially popular in American kitchens during the 1980s and 1990s when fruit-based salads with Asian-inspired dressings started appearing in restaurants and home cookbooks. The sweet mandarin oranges add a burst of freshness that pairs beautifully with savory chicken and crunchy toppings like almonds or crispy noodles. The dressing is usually a light vinaigrette or sesame-style dressing that ties all the flavors together without making the salad feel heavy.

One of the reasons Mandarin Orange Chicken Salad is so appealing is its versatility. It works just as well for a quick lunch as it does for a casual dinner or even a potluck gathering. Using cooked chicken—such as grilled chicken or rotisserie chicken—makes the recipe quick and convenient. The salad also looks beautiful on the table with its bright colors and fresh ingredients.

Why Do I Love This Recipe?

I love this recipe because it’s both refreshing and filling at the same time. The sweet mandarin oranges add a pop of flavor that makes the salad feel special, while the chicken provides enough protein to make it a satisfying meal. It’s also incredibly easy to prepare, especially when using leftover or rotisserie chicken. The mix of textures—from crisp lettuce to juicy fruit and crunchy toppings—makes every bite interesting and delicious.

Serving Suggestions

Mandarin Orange Chicken Salad can be served as a main dish for lunch or a light dinner. It pairs wonderfully with warm dinner rolls, garlic bread, or a bowl of soup for a more complete meal. It also works well as a side dish alongside grilled chicken, roasted vegetables, or Asian-inspired dishes like stir-fry or fried rice.

Storage and Freezing

If you have leftovers, store the salad and dressing separately in airtight containers in the refrigerator for up to 2 days. Keeping the dressing separate helps the greens stay crisp. Freezing is not recommended because the lettuce and fresh vegetables will lose their texture once thawed.

Variations of the Recipe

There are many ways to customize Mandarin Orange Chicken Salad. You can add sliced almonds, cashews, or sunflower seeds for extra crunch. Crispy chow mein noodles are also a popular topping. Some cooks like to add shredded carrots, sliced cucumbers, or green onions for additional flavor. You can also swap the chicken for grilled shrimp or even tofu for a different twist.

Course: Appetizer, Salad, Side Dish
Cuisine: Asian, Chinese
Ingredients Method

Ingredients

  • ½ cup green onions finely chopped
  • 4 cups cooked chicken shredded or cut into small cubes
  • 8 oz cream cheese softened
  • 1 cup celery finely chopped
  • 1 cup mayonnaise
  • 1 15 oz can mandarin orange segments, drained very well
  • 2 teaspoons Worcestershire sauce
  • 1 cup slivered almonds
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Method

  1. In a large mixing bowl, add the cooked chicken, chopped celery, drained mandarin oranges, chopped green onions, and slivered almonds. Gently toss the ingredients together so they are evenly combined.
  2. In a separate medium bowl, add the softened cream cheese and mayonnaise. Using a spoon or hand mixer, blend them together until smooth and creamy.
  3. Stir in the Worcestershire sauce, garlic powder, and a pinch of salt and black pepper. Mix well until the dressing is fully combined and smooth.
  4. Pour the creamy dressing over the chicken mixture in the large bowl. Use a spoon or spatula to gently fold everything together until the chicken and vegetables are evenly coated with the dressing. Be careful not to mash the mandarin oranges while mixing.
  5. Taste the salad and adjust the seasoning with additional salt and pepper if needed.
  6. Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 4 hours. Chilling the salad allows the flavors to blend together and improves the texture.
  7. Before serving, give the salad a gentle stir. Serve cold and enjoy.
  8. Enjoy!
