Mexican Taco Lasagna

Lasagna is a beloved Italian dish with meat, tomatoes, cheese, and Italian flavors, while tacos have tortillas in place of lasagna noodles and are flavored using different spices. This dish is different though, because it’s a flavorful combination of Mexican flavors and an Italian cooking technique.

Corn tortillas take the place of lasagna noodles, while tomato salsa is used here instead of the tomato sauce typically found in Italian lasagnas. You also need ground beef, taco seasoning and cheese.

There are various ways to customize this dish, such as using another kind of meat, a different kind of cheese, or adding in some vegetables such as corn or sliced mushrooms. As this is such a simple dish to prepare and it tastes so good, you’ll want to make it again and again.

Variations and Substitutions

Use any kind of ground meat, any kind of cheese and sub flour tortillas for the corn ones if that’s your preference.

INGREDIENTS:

  • 1 pound ground beef
  • 1 cup tomato salsa
  • 1-ounce package taco seasoning
  • 14 ounces canned diced tomatoes in juice
  • 10 soft corn tortillas (6-inches across)
  • ½ cup shredded Mexican blend or Colby cheese

INSTRUCTIONS:

Preheat the oven to 350 degrees F.

Brown the ground beef in a deep skillet over a moderate to high heat, breaking it up with a wooden spoon.

When the beef is brown all over, stir in the tomatoes and taco seasoning.

Arrange half the tortillas over the bottom of a 13 x 9-inch baking dish so they overlap.

Spoon the meat mixture on top and then add the rest of the tortillas.

Spread salsa over the top and sprinkle over the cheese.

Bake for 20 minutes or until the cheese is bubbly and melted.

Serve immediately.
