Ingredients Method

Ingredients
  

  • 1 box yellow cake mix
  • 3 3.4 oz boxes instant pistachio pudding mix
  • 1 cup hot water
  • ½ cup vegetable oil
  • 4 eggs
  • ¼ cup chopped pistachios
  • Green food coloring optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease two loaf pans.
  2. In a large mixing bowl, combine the cake mix, pistachio pudding mixes, hot water, vegetable oil, and eggs.
  3. Beat until smooth and well combined.
  4. Add a few drops of green food coloring if desired for a brighter color.
  5. Fold in the chopped pistachios.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaves to cool in the pans for 10–15 minutes, then transfer to a wire rack to cool completely.
