There’s nothing quite like the aroma of tender beef simmering in a rich sauce while noodles soak up every bit of flavor. Slow cooker beef and noodles is one of those classic comfort foods that takes you back to cozy family dinners and lazy Sunday afternoons. The beauty of this recipe is that it requires minimal hands-on time—you simply combine a few hearty ingredients in your slow cooker, and by the end of the day, you have a warm, satisfying meal waiting for you.

Why Do I Love This Recipe?
I love this recipe because it’s simple, yet incredibly comforting. The slow-cooked beef becomes tender enough to melt in your mouth, and the noodles soak up all the savory flavors from the sauce, making every bite hearty and satisfying. Plus, the aroma that fills the kitchen while it’s cooking is unbeatable. It’s a dish that feels like a warm hug on a plate.

Serving Suggestions
Serve this dish straight from the slow cooker for a casual, cozy meal. It pairs wonderfully with a side of steamed green beans, roasted carrots, or a crisp garden salad. Add a sprinkle of fresh parsley or a little grated Parmesan for an extra layer of flavor. For a more indulgent meal, serve with buttery dinner rolls to mop up the sauce.

Storage & Freezing
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. If you want to freeze portions for later, allow the dish to cool completely, then place it in freezer-safe containers. It can be frozen for up to 3 months. Reheat gently on the stovetop over low heat, adding a splash of broth or water if the sauce has thickened too much.

Variations of the Recipe
You can easily adapt this recipe to suit your tastes. Add mushrooms, onions, or carrots to the slow cooker for extra vegetables. Swap egg noodles for wide pappardelle, fettuccine, or even rice noodles for a different twist. For a richer flavor, use beef stock instead of water, or stir in a splash of Worcestershire sauce or soy sauce to deepen the umami.

This slow cooker beef and noodles recipe is a comforting, versatile, and easy meal that never fails to satisfy. It’s truly a family favorite that brings everyone together at the table.

Cuisine: American
Ingredients Method

Ingredients

  • 2 lbs beef stew meat or chuck roast cut into bite-sized piece
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 3 cups egg noodles
  • 1/4 cup flour
  • 1/4 cup water
  • 1 tbsp Worcestershire sauce

Method

Optional Browning:
  1. In a skillet over medium heat, brown the beef pieces on all sides. This adds extra flavor but can be skipped if you prefer a simpler method.
Load the Slow Cooker:
  1. Transfer the beef to your slow cooker. Add chopped onion, minced garlic, beef broth, salt, pepper, thyme, rosemary, and the bay leaf. Stir to combine.
Cook:
  1. Cover and cook on low for 7–8 hours, or until the beef is tender and can be easily shredded with a fork.
Add Noodles:
  1. About 30 minutes before serving, remove the bay leaf and stir in the egg noodles.
Thicken the Sauce:
  1. In a small bowl, whisk together the flour and water to create a slurry. Stir it into the slow cooker to thicken the sauce.
Add Flavor:
  1. Stir in Worcestershire sauce and mix well. Continue cooking for another 30 minutes, or until the noodles are tender and the sauce has thickened.
Serve:
  1. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired, alongside a side of steamed vegetables or a crisp salad.
  2. Enjoy!
