Slow Cooker Ham, Green Beans, and Potatoes is one of those humble, old-fashioned meals that feels like a hug in a bowl. It’s the kind of recipe that reminds me why simple food is often the most satisfying. No fancy ingredients, no complicated steps—just honest, hearty flavors that slowly come together while your kitchen fills with the most comforting aroma. This is the meal you make on a busy weekday, a cold Sunday afternoon, or anytime you crave something nourishing and familiar without standing over the stove.

What makes this dish so special is how effortlessly the slow cooker does all the work. The ham becomes tender and savory, the potatoes soak up every bit of flavor, and the green beans turn soft and rich without losing their bite. It’s a one-pot meal that feels nostalgic, filling, and incredibly practical—exactly the kind of recipe every home cook should have in their back pocket.

Why Do I Love This Recipe?

I love this recipe because it’s dependable. It never fails, it stretches ingredients, and it feeds a family without draining the grocery budget. It’s also endlessly comforting—salty ham, buttery potatoes, and slow-cooked green beans are a combination that just works. Plus, it’s a true “set it and forget it” meal, which means less stress and more time to enjoy the day.

Serving Suggestions

This dish is hearty enough to stand on its own, but it pairs beautifully with a slice of cornbread, crusty bread, or warm dinner rolls to soak up the flavorful broth. If you want to add something fresh, a simple side salad or sliced tomatoes balances the richness nicely. For extra indulgence, a pat of butter or splash of vinegar right before serving takes it to the next level.

Storage & Freezing

Leftovers store wonderfully. Keep them in an airtight container in the refrigerator for up to 4 days. The flavors deepen overnight, making it even better the next day. To freeze, let the dish cool completely and portion it into freezer-safe containers. Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stove or in the microwave.

Variations of the Recipe

You can easily customize this dish. Swap smoked sausage or ham hocks for a deeper smoky flavor. Add carrots, onions, or a pinch of red pepper flakes for extra depth. Want it richer? Stir in a little butter at the end. This recipe is flexible, forgiving, and always delicious—just the way comfort food should be.

Ingredients Method

Ingredients

  • 2 pounds fresh green beans trimmed and cut into pieces
  • 1 cup chopped onion
  • 1 large ham hock or 2–3 small ham hocks
  • 2 pounds small gold potatoes chopped
  • 4 cups chicken broth
  • 2 teaspoons minced garlic
  • 1 teaspoon seasoned salt
  • Black pepper to taste

Method

  1. Add the green beans, chopped onion, and chicken broth to a slow cooker. Nestle the ham hock into the mixture, cover, and cook on HIGH for 1 hour.
  2. Reduce the heat to LOW and continue cooking for 3 hours.
  3. Remove the lid and carefully take out the ham hock. Add the chopped potatoes to the slow cooker.
  4. Once the ham hock is cool enough to handle, remove the meat from the bone and chop it into bite-sized pieces. Return the ham to the slow cooker along with the minced garlic, seasoned salt, and black pepper.
  5. Cover and cook on HIGH for an additional 1½ hours, or until the potatoes are fork-tender. Stir gently, taste, and adjust seasoning if needed before serving.
  6. Enjoy!
