You can use any cookies you want, any flavor of frosting and any kind of ice cream and it can be fun to mix and match or let the kids decide when making their own. Maybe you’ll come up with a brand new favorite combination. To make these into an adult-friendly elegant treat, you can dip them halfway in melted chocolate after freezing and serve with a toasted s’mores martini or espresso martini!

How to make S’mores Ice Cream Sandwich:
Step 1. Break the graham cracker sheets up so you end up with 24 squares.
Step 2. Spread a tablespoons of chocolate frosting on 12 of the squares and spread a tablespoon of marshmallow crème on the other 12 squares.
Step 2. Cut the cardboard off the ice cream with scissors so you just have the solid block of ice cream.
Step 4. Cut the ice cream lengthwise into thirds, and then you can cut every third into 2 squares.
Step 5. Now put each square of ice cream on a frosted graham cracker and top each one with the marshmallow crème graham cracker, marshmallow side down, to make the ice cream sandwiches.
Step 6. If you need to trim the ice cream edges to make them fit the crackers, you can eat them!
Step 7. Freeze for 4 hours or until completely set.
Step 8. Wrap each one in foil and put in a Ziploc freezer bag (you might want to double bag, just in case).
