Slow Cooker Lemon butter cod

January 12, 2026 //  by Ann

There’s something magical about the simplicity of a slow-cooked fish dinner, and this Slow Cooker Lemon Butter Cod is a perfect example. Flaky, tender cod cooked in a rich lemon-butter sauce is the kind of dish that feels elegant enough for company yet simple enough for a busy weeknight. The slow cooker does all the hard work, letting the cod absorb the bright citrus notes and buttery goodness while staying perfectly moist and delicate. It’s a recipe that proves healthy eating doesn’t have to be bland, and comfort food can be light and refreshing.

Why I Love This Recipe
I love this recipe because it’s fast, fuss-free, and produces restaurant-quality results without the stress. The cod stays tender and flaky without drying out, thanks to the gentle heat of the slow cooker. The lemon and butter combination is bright, tangy, and rich all at once, making every bite feel indulgent. Plus, it’s a recipe that fills the house with the amazing aroma of garlic, butter, and lemon—instant comfort.

Serving Suggestions
This cod pairs beautifully with a variety of sides. Serve it over a bed of fluffy rice, quinoa, or cauliflower rice for a wholesome meal. Steamed vegetables or a crisp green salad complement the richness of the lemon-butter sauce. For a heartier dinner, roasted baby potatoes or garlic mashed potatoes are perfect. Don’t forget a sprinkle of fresh parsley or a few lemon wedges to finish off the dish.

Storage & Freezing
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Gently reheat in the microwave or a covered skillet with a splash of water or broth to maintain moisture. Freezing is possible, but because cod is delicate, it’s best to freeze only the cooked cod for short periods—up to a month. Thaw in the refrigerator and reheat gently to avoid overcooking.

Variations
Feel free to customize this recipe! Swap cod for other white fish like haddock, tilapia, or halibut. Add capers or chopped olives for a Mediterranean twist. For an herby variation, mix in fresh dill, thyme, or tarragon. A touch of garlic powder, paprika, or red pepper flakes can also add depth and a little heat.

This Slow Cooker Lemon Butter Cod is simple, flavorful, and versatile—a recipe you’ll want in your weeknight dinner rotation. It’s comfort food meets elegance, all in one slow cooker.
