There’s something irresistible about the combination of juicy cheeseburgers and creamy, cheesy pie, and that’s exactly what you get with this Impossible Cheeseburger Pie. This recipe is comfort food at its finest, transforming classic burger flavors into a rich, satisfying pie that’s perfect for weeknight dinners or casual family gatherings. It’s called “impossible” because it almost magically bakes together without the fuss of separate layers—it’s simple, hearty, and downright addictive.

What I love most about this recipe is how it captures the essence of a cheeseburger in every bite. The seasoned ground beef is perfectly complemented by the creamy, cheesy cornbread-like crust, and every slice is packed with flavor and texture. It’s the kind of dish that warms you from the inside out, bringing a nostalgic feeling of family dinners around the table. The combination of melty cheddar, savory beef, and just the right touch of seasoning makes this pie a winner every time.

Serving suggestions? This pie pairs wonderfully with a fresh side salad or roasted vegetables for a lighter meal, or you can serve it with French fries or potato wedges for an extra indulgent comfort food experience. A dollop of ketchup or a little mustard on top can give it that true cheeseburger vibe. It’s also a hit at potlucks because it’s easy to slice and serve, and everyone always goes back for seconds.

Storage & freezing: Leftovers keep well in an airtight container in the refrigerator for up to 4 days. For longer storage, wrap individual slices tightly in plastic wrap and aluminum foil and freeze for up to 3 months. To reheat, simply bake at 350°F until warmed through or microwave slices individually for a quick lunch or dinner.

Variations of the recipe: This pie is highly versatile. You can swap the cheddar for pepper jack or Swiss for a different flavor profile, or add diced pickles, sautéed mushrooms, or caramelized onions for extra richness. For a low-carb option, replace the crust with almond flour or a cauliflower base, or make it spicy by adding jalapeños to the beef mixture.

Whether you’re feeding a hungry family or bringing something hearty to a gathering, this Impossible Cheeseburger Pie is sure to impress. It’s simple to make, packed with flavor, and utterly comforting—the ultimate spin on a cheeseburger that you can eat with a fork.

Course: Dinner, Lunch, Main Course
Cuisine: American
Ingredients Method

Ingredients

  • 1 ½ pounds lean ground beef 80/20
  • 1 large onion chopped
  • 1 tsp. minced garlic
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tbsp. onion soup mix
  • ½ cup Bisquick
  • 2 large eggs room temperature

Method

  1. Preheat your oven to 400°F (200°C) and lightly spray a 9-inch baking dish with non-stick cooking spray.
Cook the beef mixture:
  1. In a large skillet over medium heat, combine the ground beef, chopped onion, and minced garlic. Cook for 5–7 minutes, stirring occasionally, until the beef is browned and the onions are translucent. Drain any excess grease.
Layer the beef and cheese:
  1. Transfer the cooked beef mixture to the prepared baking dish and spread it evenly. Sprinkle the shredded cheddar cheese over the top of the beef, distributing it evenly.
Prepare the topping:
  1. In a medium mixing bowl, whisk together the Bisquick, onion soup mix, eggs, and milk until smooth.
Add the topping:
  1. Pour the Bisquick mixture over the beef and cheese, making sure it covers everything evenly.
Bake the pie:
  1. Place the dish in the preheated oven and bake for 25 minutes, or until the topping is set and lightly golden on top.
Garnish and serve:
  1. Allow the pie to rest for a few minutes before slicing. Garnish with extra shredded cheese, chopped parsley, or even a few diced pickles for a true cheeseburger flair. Serve warm.
  2. Enjoy!
