Easy Burrito Casserole: Comfort Food in a Dish

March 30, 2026 //  by Ann

If you love the flavors of a classic burrito but want a hands-off, family-friendly meal, Easy Burrito Casserole is the perfect solution. This recipe takes all the best parts of a burrito—seasoned meat, beans, cheese, and spices—and layers them into a baked casserole that’s perfect for weeknight dinners, potlucks, or meal prep. Instead of rolling individual burritos, this dish lets you assemble everything in one pan, bake, and enjoy a warm, cheesy, hearty meal that satisfies everyone at the table. It’s also a great way to use up leftover rice, beans, or cooked meats, making it both convenient and budget-friendly.

Why I Love This Recipe

I love this recipe because it’s easy, customizable, and endlessly comforting. The layers of seasoned beef or chicken, beans, rice, and cheese come together into a rich, flavorful dish that tastes like it took hours to prepare—but it really doesn’t. It’s the kind of recipe that’s forgiving, so you can adjust the ingredients based on what your family likes or what’s in your pantry. Plus, it’s cheesy, saucy, and satisfying—a true crowd-pleaser for both kids and adults.

Serving Suggestions

Serve this burrito casserole with classic Mexican sides like guacamole, salsa, sour cream, or a fresh green salad. A side of tortilla chips or Spanish rice complements the flavors perfectly. For extra texture and color, sprinkle some chopped green onions, fresh cilantro, or diced tomatoes on top before serving. It also pairs wonderfully with a cold beverage, like iced tea or a light Mexican lager.

Storage & Freezing

This casserole stores beautifully. Keep leftovers in an airtight container in the refrigerator for up to 4 days. You can also freeze individual portions or the entire casserole for up to 3 months. Reheat in the microwave or oven until warmed through. Freezing makes it an excellent make-ahead option for busy weeks or unexpected guests.

Variations

This recipe is highly versatile. Swap ground beef for shredded chicken, turkey, or even a vegetarian option with beans and vegetables. Add corn, bell peppers, or jalapeños for extra flavor and texture. For a spicier twist, include diced green chiles or a pinch of cayenne pepper. You can also experiment with different cheeses, like Monterey Jack, queso fresco, or a Mexican blend, to suit your taste.

Ingredients Method

Ingredients

  • 1 ½ lb ground beef
  • 1 packet taco seasoning
  • 1 can mild enchilada sauce
  • 1 can refried beans
  • 1 can corn drained
  • 8 large flour tortillas cut in half
  • 2 cups shredded taco blend cheese
  • 1 small can green chiles
  • Green onions chopped, for garnish (optional)

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef until fully browned. Drain any excess fat.
  3. Stir in the taco seasoning and cook for an additional 2–3 minutes to allow the flavors to blend.
  4. Add the corn, refried beans, enchilada sauce, and green chiles to the skillet. Mix thoroughly and simmer for 5 minutes.
  5. Arrange a layer of 4 tortilla halves at the bottom of the prepared baking dish.
  6. Spread half of the meat mixture evenly over the tortillas, then sprinkle with half of the shredded cheese.
  7. Repeat with the remaining tortillas, meat mixture, and cheese, creating a second layer.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with chopped green onions if desired. Serve warm.
  10. Enjoy!
