Ingredients Method

Ingredients
  

Crust:
  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 sticks butter cold
  • 1/2 teaspoon salt
Pecan Pie Bar Filling:
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed brown sugar
  • 3 tablespoons butter melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans chopped or in pieces

Method
 

Preheat the oven:
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
Make the crust:
  1. In a large bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry blender, fork, or your fingers until the mixture resembles coarse crumbs.
  2. Press the mixture evenly into the bottom of the prepared baking pan to form the crust layer.
Bake the crust:
  1. Bake the crust in the preheated oven for about 15 minutes, or until it is just starting to turn golden. Remove from oven and set aside.
Prepare the filling:
  1. In a large mixing bowl, whisk together the eggs, light corn syrup, granulated sugar, brown sugar, melted butter, and vanilla extract until smooth and well combined.
Add pecans:
  1. Stir the chopped pecans into the filling mixture.
Assemble the bars:
  1. Pour the pecan filling evenly over the pre-baked crust.
Bake the bars:
  1. Return the pan to the oven and bake for 30 to 35 minutes, or until the filling is set and golden around the edges. A toothpick inserted into the center should come out mostly clean.
Cool and serve:
  1. Allow the bars to cool completely in the pan on a wire rack before cutting into squares. Serve at room temperature or slightly warmed.
