How to make Chicken Caprese:
Step 1. Preheat the oven to 375 degrees.
Step 2. Add the 6 fully cooked chicken breasts on a baking sheet and bake them uncovered for 15 minutes.
Step 3. Pour one cup of balsamic vinegar into a pot over medium-high heat.
Step 4. When it starts to boil, add ¼ cup brown sugar.
Step 5. Reduce the mixture to low and simmer for 10 minutes.
Step 6. Remove the chicken from the oven.
Step 7. Add a mozzarella slice to each chicken piece and season with salt and pepper to taste.
Step 8. Add herbs de provence seasoning on top.
Step 9. Return the chicken to the oven and bake for 1 to 2 minutes so the mozzarella melts.
Step 10. Remove the chicken from the oven.
Step 11. Slice the tomatoes thickly and add a slice over each chicken breast. Drizzle with the prepared balsamic glaze and sprinkle with fresh chopped basil.
